Make Your Own Jaffa Cakes
I apologise for not updating my blog for a while.... But now I'm back with a delicious post.
I'm going to be telling you, sorry for how bossy that sounds, how to make Jaffa Cakes.
So first of all you will need 2 eggs, 4 oz of caster sugar, 4 oz of self raising flour, 4 oz of butter, shredless marmalade (or orange jelly if you prefer) and a bar of either milk or dark chocolate. Dark chocolate makes it more like the real thing but if you prefer you can you milk chocolate, I used milk chocolate because I couldn't find any dark chocolate! If you are going to make the jelly, do this before you make the cakes. Also pre-heat your oven to 180 degrees Celsius before making your cakes.
First of all you will need to cream the butter and the caster sugar together until it forms a light and fluffy mixture. You could either use a electric whisk or do it by hand.... It works either way.
Next you cracking the eggs into the butter and sugar mixture and mix that in until it is a smooth liquid type mixture. This is also the point where you can add vanilla essence if you want, I didn't because I had none in the house!
You then need to add the self raising flour and fold that into the mixture. You can sieve it in but you do not need to!
You will then need to put the mixture into each of the cases. You can decide on how much you put in the case depending on how thick you want your cake to be!
Place your cakes into the oven for around 15 minutes and when they come out of the oven place them onto a cooling rack.
When the cakes are cool put as much as one teaspoon of jelly or marmalade onto each cake. You can put less but don't put any more than that on.
Melt the chocolate in a bowl above a pan of boiling water, this is where you will need to seek an adults help if you need it. You can remove the pan from the heat when only a little chocolate needs melting and stir it until it is melted.
Drizzle the chocolate over the cake until it is completely coated to the thickness you want it.
Leave to set in the fridge before eating. Honestly it is nice with the chocolate melted!! They look good even if the coating isn't the best because it gives them that homemade look.. This is my own recipe and my first time making them. I really enjoyed it and I hope you do too!!
