Lemon Cheese Cake
For today's post, since I owe you one, I thought I'd share a recipe with you that I used in year 8 and loved!
Lemon Cheese Cake-
Ingredients-
150g digestive biscuits
75g butter
225g cream cheese
125ml double cream
50g caster sugar
1 lemon
Method-
1.Smash the biscuits in a bowl with a
rolling pin
2.Melt the butter in a pan then quickly mix
the biscuits in the pan
3.Quickly move the biscuit mix in to a tin
and pat it down before it hardens
4.Soften the cream cheese and whip the
cream in separate bowls
5.Grate the rind of the lemon
6.Cut the lemon in half and
Squeeze the lemon
7.Add the cream cheese along with the
sugar, rind and juice and mix
8.Scoop out the lemon mix on to the
hardened biscuit mix and smooth down
9.Garnish with left over lemon and spare
cream
10.Chill and then serve
